Dine on a Dime: Mexican Fudge

To continue our theme of comfort food from last week, I want to share a ridiculously simple recipe which may strike many as a rather strange dish, but I promise — it’s insanely comforting. My mom makes this recipe at least once a year, for my brother’s birthday. It’s his favorite.

Mexican Fudge

Ingredients

1 lb. sharp cheddar cheese — grated

Directions:

Heat oven to 300 degrees. Put cheese in bottom of 9×13 casserole dish or baking pan. Mix salsa and eggs well. Pour mixture over cheese, and spread with a spoon until even. Bake for 20 minutes. Let cool slightly and cut into squares. Serve with tortilla chips.
