Earth Day has yet to gain the revered status Valentine’s Day, Halloween, and other secular holidays have in American society. This is understandable, given the populace’s love for Farmers’ Markets has yet to surpass its love of cheap chocolate. But the day may come when, in April, entire supermarket aisles are doused in green and devoted to selling seeds and organic cotton T-shirts. For those who missed out on celebrating Wednesday, get into the spirit through cuisine. Try some angel-hair pasta with asparagus and strawberry cobbler, and maybe even plant some trees as well.
